Chefs in the Thiérache enjoy preparing their specialities for you – full of flavour, rich and succulent. There is something for every taste. Start with a light aperitif (in moderation of course!), then rabbit in cider, followed by Maroilles, the most subtle of strong cheese, and a ‘rabote aux pommes’ (apple in puff pastry parcel) to finish on a sweet note.
